Red Chocolate Cheesecake
Red Chocolate Cheesecake
Step 1
In the bowl of your stand mixer, add your cream cheese, salt, and white sugar, paddle on low to combine, then raise speed to medium high and mix until light and fully smooth, about 3 - 4 minutes. (make sure to scrape the bowl at least once)
Step 2
In a separate medium bowl, whisk together your egg, milk, cornstarch, and cocoa powder until fully smooth and no lumps remain (this may take a couple minutes!)
Step 3
Once homogeneous, stream egg mixture into stand mixer set to low. Allow to combine, then raise speed to medium high and paddle for 1 minute. (scrape your bowl too!)
Step 4
Add your red color, if desired.
Step 5
Cheesecake can be made 1 - 2 days ahead and stored in an airtight container in the fridge.
