This bar is our go-to recipe when there is no time to go all the way to pie town. It turns the classic Milk Bar Pie ratio upside down: This is about 2 parts toasted oat cookie crust to 1 part gooey, buttery filling. And no one’s mad at it.

MILK BAR PIE BARS

Toasted Oat Crust

STEP 1

Heat the oven to 350°F. Pan-spray an 8 × 8-inch square baking dish.

STEP 2

Toasted Oat Crust: In a large bowl, mix together the butter, brown sugar, and sugar with a spatula until well combined. Mix in the egg and stir until well combined, scraping down the sides of the bowl as you go. Add the oats, flour, salt, and baking powder, and mix just until combined. Pour this mixture into the greased baking dish and use a spatula to evenly, spread the mixture, fully covering the dish’s bottom.

STEP 3

Bake at 350°F until the edges of the crust are golden brown, about 20 minutes. Cool at room temperature for 10 minutes. Leave the oven on.
