Bake Club Cherry Pie Cookies

Makes 12-18 cookies

1 stick unsalted butter, softened

½ cup sugar

⅓ cup light brown sugar

1   large egg

1 cup flour

¾ teaspoon  kosher salt

¼ teaspoon baking powder

⅛ teaspoon baking soda

1 recipe Pie Crumb, follows

¾ cup dried cherries

1 large egg white

¼ cup granulated sugar

  1. Heat the oven to 350°F. Spray two baking sheets.

  1. In a large bowl, mix together butter and sugars until combined and smooth. Add egg and continue mixing.  Add the flour, salt, baking powder and baking soda and stir just until combined. Stir in pie crumbs and cherries until well distributed.

  1. Scoop cherry cookie dough into ⅓ cup-sized balls and place 2 to 3 inches apart onto your sprayed cookie sheets. Flatten the mounded cookie dough tops with the palm of your hand. Brush each flattened top with egg white, then sprinkle a generous amount of granulated sugar on top. Bake the cherry cookies for 8 to 10 minutes, until the edges of the cherry cookies are golden brown and the top a glossy sugar crystal surface.

Cool completely then dig in.

Think of these cherry pie cookies as a delicious mashup of classic cherry pie and the humble sugar cookie. The end result is something incredibly delightful – cookies that offer the tart punch of cherries complemented by the sweet undertone of sugar cookies.

This recipe is designed to give you a one-of-a-kind cookie. It's like having a mini cherry pie that fits right in your hand - and it's easier than making homemade cherry pie filling. The cherry on top, you ask? Those deliciously golden brown edges, achieved from baking these gems to perfection. They're the perfect treat for any occasion or just because.
