Albanian Crepes (aka llallangeja)

My deepest memories of my mom are waking up early mornings to find her already cooking with only the oven light on, making a million llallangejas for the family. She was always the first one awake and somehow immediately knew what to cook. Soon enough, I'd wake up and help her one crepe at a time (mostly because I could not wait to eat). They're simple, warm, they can be sweet, but we kept them mostly savory, and wrapped mini burrito style. It's where my love of cooking & food started; in the kitchen making llallangeja's with my mom. This time of year, I always make them in honor of her and in honor of how delicious they are. I love you a million crepes, mom!

Albanian Crepes (aka llallangeja)

Albanian Crepe Recipe

Step 1: Add the flour and salt to a mixing bowl

Step 2: In a separate bowl, whisk together the milk and the eggs

Step 3: Slowly add the wet ingredients to the dry, whisking to get rid of any lumps (the crepe batter should be very runny)

Step 4: Heat a non-stick pan on medium heat and lightly spray with non-stick cooking spray

Step 5: Ladle your crepe batter onto your pan, turning quickly to evenly coat the pan with the mixture (about a ½ cup measurement)

Step 6: Once your mixture curls up along the edge - it’s time to FLIP!

Step 7: Continue cooking the crepes for 1-2 minutes on the other side until it has the same brown spots all around

Step 8: Place your crepe on a plate and lightly brush with a little butter so the crepes don’t stick

Step 9: Halfway through, add the everything mix to the batter and continue with steps 4 - 8

Step 10: Once all your crepes are all made, add the filling of your choice to the center of the crepe, and fold like a mini burrito! Top with powdered sugar if desired.
