Pineapple Casserole

pineapple tidbits (20 oz can)
7 tablespoons cornstarch (ap flour can be used as a sub)
1.5 cup white sugar
shredded sharp Cheddar cheese (2ish cups)
shredded extra sharp cheddar cheese (2ish cups)
crushed pineapple, drained (20 oz can)
ritz crackers, crushed (one regular size roll, a bit extra if needed)
butter (1 stick, with a half a stick extra just in case you need a little more)
Preheat oven to 350. Drain the tidbits chunks, reserving about 1/4 of the juice.
Combine the flour, sugar, half of cheddar cheese, reserved pineapple juice, pineapple tidbits, and crushed pineapple in a large bowl.
Pour the mixture into a casserole dish. Sprinkle remaining cheese on top.
Mix the cracker crumbs and butter in a small bowl, then sprinkle over the pineapple mixture.
Bake until golden brown and edges are bubbling, for about 30 minutes.
