INGREDIENTS
½ cup orange, lemon, lime or grapefruit juice, freshly squeezed. OR Koolaid! Country Time! (Just no bottled fruit juices)
3 tablespoons unflavored gelatin (this is 1.5 packets of KNOX)
¼ cup sugar (unless your juice is already plenty sweet)
1 tablespoon corn syrup if you have it (or honey if you don’t)
INSTRUCTIONS
Grab silicone molds- bear shaped, legos, ice cubes big or small (or heck a flat pan or bowl) and coat in non-stick spray.
In a medium saucepan off heat, sprinkle gelatin evenly over liquid and let sit for 2 minutes until it absorbs completely and turns translucent. Add sugar and corn syrup and transfer saucepan to a medium-low heat, mixing with a spatula (not whisk), being careful to move the mixture around, but not aerate.
Once all ingredients have dissolved and liquid is clearly warmed but not yet boiling, pour warm mixture in, filling each mold to your liking. Let sit 3 minutes at room temperature. Transfer to fridge for 30 mins to set completely.
Bring back to counter, knock out on a clean plate or pan (cut down to size, if needed) and leave out for 6-24 hours to dehydrate - they’ll shrink up to 25% and the longer you can resist, and let sit out, the chewier they become.
My favorite option is to roll them in sugar, or sugar + citric acid for a little extra texture and personality!
