Fruit Roll Ups

INGREDIENTS
2-3 cups fruit cut into small cubes (3 peaches, 4 nectarines, 1 lb strawberries, 1 pint blueberries etc.
3 Tablespoons sugar
1-2 Tablespoons lemon juice
Heat oven to 200F(or as low as your oven will go!)
In a blender, puree fruit until smooth. Add sugar and lemon juice and pulse to combine.
Pour the fruit puree onto a baking sheet lined with plastic wrap and spread ½-¼” thick- your preference- just keep in mind the thickness defines the time it will spend in the oven! Tap the pan on the counter once or twice to settle the mixture, then bake for 1-3 hours or until the middle of your fruit sheet is no longer tacky to the touch.
Remove from the oven and cool completely. Once cool, remove the fruit sheet from the plastic wrap and with clean scissors, cut your fruit sheet into long narrow strips for a Fruit by the Foot effect or into a 6x6” square for some Fruit Roll Up action, being sure to also cut a similarly sized piece of wax or parchment paper as you roll.
Store in plastic baggies at room temperature for up to a week.
