Flavored Popcorn

1 bag plain microwave popcorn, freshly popped (10 cups popcorn)
Or 
½ cup kernels, freshly popped in 2 tablespoons oil (10 cups popcorn) on stovetop in large pot or in microwave in brown paper bag.

Caramel Popcorn
5 cups (half batch) salted popcorn, still warm
1 stick butter
½ cup light brown sugar
1 teaspoon vanilla
¼ teaspoon baking soda 
Salt

Ensure popcorn is in a very large bowl.

Heat the butter and light brown sugar in a medium heavy-bottomed saucepan over medium heat, stirring constantly until it comes to a boil. Reduce temp to medium low and cook for an additional 2 minutes without stirring. Add vanilla, stir to mix and once simmered in, turn the heat off, sprinkle in the baking soda and stir. The mixture will expand and turn color slightly. Carefully pour over the bowl of popcorn, using a spatula to gently mix the two together until all kernels are covered. Spread on a greased baking to cool. Salt to taste. Dig in!

Caramel-Cheddar Popcorn
5 cups (half batch) popcorn, still warm
3 tablespoons butter, melted
1 pack mac & cheese powder
Salt
1 recipe caramel popcorn

Toss popcorn in melted butter until evenly coated. Sprinkle in cheese powder and toss until evenly coated. Salt/sugar to taste. Keep warm while making caramel popcorn above, using your cheesy popcorn in place of plain popcorn.

Caramel-Chocolate Popcorn
5 cups (half batch) popcorn, still warm
1 recipe caramel popcorn
½ cup chocolate chips
1 teaspoon oil

As you are making your caramel popcorn, melt chocolate and oil together gently in the microwave. As your caramel popcorn mixture cools on the sheet pan, drizzle melted chocolate mixture atop and let set (you can speed this up by popping it in the fridge or freezer for a few mins!)


Cheddar-Old Bay Popcorn
5 cups (half batch) salted popcorn, still warm
4 tablespoons butter, melted
1 pack mac & cheese powder
2 teaspoons old bay seasoning
Salt
Sugar

Toss popcorn in melted butter until evenly coated. Sprinkle in cheese powder and old bay seasoning and toss until evenly coated. Salt/sugar to taste, if needed.
