Donuts

Makes 4 donuts

4 cups oil

½ cup milk 

2 teaspoons vinegar

2 tablespoons butter, melted

1 egg

1 cup + 3 Tablespoons flour, plus more for dusting

¼ cup sugar

1 teaspoon salt

¾ teaspoon baking powder

⅛ teaspoon baking soda

⅛ teaspoon cinnamon



Confectioner’s sugar or glazes for dusting/coating!

In a medium saucepan heat oil to 325F.

In a medium bowl, whisk together milk, vinegar, melted butter and egg until combined. Stir in flour, sugar, salt, baking powder, baking soda and cinnamon and mix until smooth, but still sticky.

Plop the dough out onto a lightly floured work surface. Flour your hands and bring the dough together, patting the surface and sides with the palms of your hands to press the dough into roughly a 4-inch square, about 1/2 inch thick.

Using cutters or the lips of a larger and smaller sized cup, cut out donut rounds.

(If you have any extra dough left after cutting out, stick it all together, press it out and repeat the process until you have used up all of the dough.)

Gently drop donut dough into hot oil, frying about 3 minutes per side, or until golden brown. 

Gently remove donut from oil and transfer to a paper towel lined baking tray, sprinkle both sides immediately with confectioner’s sugar, or, once cool, glaze and eat.

Save at least 1 reggy size for tomorrow’s Bake Club!
