Corn Cookies

Makes 13-15 cookies
2 sticks butter, at room temperature
1 1/2 cups sugar
1 egg
1 1/3 cups ap flour
1/4 cup corn flour
⅔ cup freeze-dried corn powder ** feel free to sub in any other corny product you can grind down into a powder! OR! Replace the corn with any other freeze dried item you can ground into a powder (in which case replace corn flour with ap flour)
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1 1/2 teaspoons kosher salt
Heat oven to 350F. In a large bowl stir together the butter and sugar until incorporated. Stir in egg until fully homogeneous. Stir in flours, corn powder, baking powder, baking soda and salt and mix just until combined. Scoop cookies onto greased cookie sheet, 3-inches apart and bake 12-15 minutes until golden brown on just the outer edges. Cool before going crazy!
