Corn Cookies

Makes 13-15 cookies

2 sticks butter, at room temperature

1 1/2 cups sugar

1 egg

1 1/3 cups ap flour

1/4 cup corn flour

⅔ cup freeze-dried corn powder ** feel free to sub in any other corny product you can grind down into a powder! OR! Replace the corn with any other freeze dried item you can ground into a powder (in which case replace corn flour with ap flour)

3/4 teaspoon baking powder

1/4 teaspoon baking soda

1 1/2 teaspoons kosher salt

Heat oven to 350F. In a large bowl stir together the butter and sugar until incorporated. Stir in egg until fully homogeneous. Scoop cookies onto greased cookie sheet, 3-inches apart and bake 12-15 minutes until golden brown on just the outer edges. Cool before going crazy!
