Cereal Marshmallow Cookies

Makes 12-18 cookies
2 sticks butter
1 1/2 cups sugar
1 egg
½ teaspoon vanilla extract
2 ¼ cups flour
2 teaspoons cream of tartar (if you have it— adds great acidity and accent to fruit flavored cereal)
1 ½ teaspoons salt
½ teaspoon baking powder
¼ teaspoon baking soda
1 ½ cups your favorite cereal
1 cup mini marshmallows
Heat the oven to 350F.
Combine the butter and sugar in the bowl and mix until smooth. Add the egg and extract and mix until well combined. Add flour, (cream of tartar if you’re going fruit forward,) salt, baking powder and baking soda, mixing until just combined. Add the cereal and marshmallows and mix until incorporated.
Scoop 2 to 3 inches apart on a greased baking sheet, pat down tops and bake for 10 minutes. Cool completely before digging in or storing in an airtight container.
