Bake Club Snickerdoodle Silver Dollars

Makes 16-20 silver dollar pancakes

1 cup flour
½ cup sugar
2 tablespoons milk powder
1 tablespoon baking powder
1 teaspoon cream of tartar
½ teaspoon salt

⅔ cup milk
1 egg
3 tablespoons butter, melted
1 teaspoon vanilla

Cinnamon Sugar
¼ cup sugar
2 teaspoons cinnamon


In a medium mixing bowl, whisk together the flour, sugar, milk powder, baking powder, cream of tartar and salt. Whisk in milk, egg, butter and vanilla, stirring until smooth.

In a small bowl, toss sugar and cinnamon together to make cinnamon sugar.

Spray a griddle or nonstick skillet and warm it over medium-low heat. Sprinkle 1/2 teaspoon cinnamon sugar on skillet in a small, silver dollar shape. Make as many cinnamon sugar silver dollars as you can, allowing 2-3 inches between each. Pour or scoop 1 tablespoon batter onto each cinnamon sugar surface. Cook on LOW heat until the pancake batter has set on the bottom and bubbles appear on the top about 2 minutes. Sprinkle ½ teaspoon cinnamon sugar on top of each bubbly battered surface then flip carefully with a spatula and cook the other side until caramelized, 1 to 2 minutes. Spatula off and serve on a small plate in a stack with a tiny dollop of butter. Serve warm.

Spray again before cooking the next batch.
