Bake Club Pancake Bars

Makes 12 pancake bar squares, one 8x8” pan

6 tablespoons butter, slightly browned

¼ cup sugar

2 tablespoons light brown sugar

2 eggs

¼ cup oil

¼ cup milk

¼ teaspoon vinegar

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

+maple syrup for topping

Ready to make this delicious pancake breakfast bar? Start with heating your oven to 350F and grease a 8x8” pan.

Brown butter slightly in a saucepan. Pour into a bowl with sugar and light brown sugar and mix until smooth. Stir in oil, milk and vinegar and mix until smooth. Stir in eggs and mix until smooth. Stir in flour, baking powder and salt and mix just until combined.

Spread the pancake batter across the greased 8x8” pan and bake at 350F for 20-25 minutes until golden brown. Cool completely in pan before drizzling with maple syrup.

This pancake bar recipe is perfect for a breakfast party or brunch. It's easy to put your spin on and undeniably crushable. Craving blueberry pancakes? Just add some frozen or fresh blueberries to the pancake batter. Feeling something more chocolatey? Roughly chop your favorite candy bar or add in some chocolate chips. Not to mention, the topping possibilities are endless. Try something different like sprinkles or brown sugar and cinnamon. Or stick to the classics like whipped cream, maple syrup, and butter. Either way, this pancake recipe is going to make your brunch party a hit!

And why limit the party to pancakes? Waffles, breakfast sandwiches, you do you. After all, brunch is just an excuse to hang in your PJs, crank up the tunes, get creative in the kitchen and make a little mess. Leave the dishes for Monday morning.
