Bake Club Crunchy Cornflake Chocolate Chip Cookies
12 Tablespoons butter, softenedÂ
ÂŒ cup + 2 tablespoons light brown sugarÂ
Œ cup + 2 tablespoons sugar
1 large egg
1 teaspoon vanilla extractÂ
1 Œ cups flour
1 tablespoon cornstarch
1 teaspoon baking sodaÂ
Ÿ teaspoon salt
Ÿ cup mini chocolate chips
1 cup Frosted FlakesÂ
Heat the oven to 275°F. Pan-spray or line two half-sheet pans with parchment paper or silicone baking mats.
In a large bowl mix together the butter, brown sugar, and sugar until well combined. Mix in the egg and vanilla stirring until well combined.
Add the flour, cornstarch, baking soda, and salt and mix just until it comes together. Mix in the cereal and chocolate chips until well distributed.
Scoop the dough into 1-tablespoon balls onto the prepared pans 3 to 4 inches apart and bake at 275°F for 25 minutes.
