Bake Club Chocolate Potato Chip Cookies

Makes 12 cookies
1 stick butter, softened
½ cup chocolate chips, melted
⅔ cup sugar
1 egg
½ teaspoon vanilla extract
⅔ cup flour
½ cup cocoa powder
1 teaspoon salt
½ teaspoon baking powder
⅛ teaspoon baking soda
2 cups crushed potato chips
- flaky salt for top if you’re into that kind of thing.
Heat the oven to 350°F. Pan-spray two baking pans.
In a medium size bowl, combine the butter, melted chocolate and sugar, mixing until well combined. Stir in the egg and vanilla extract and mix until smooth.
Stir in the flour, cocoa powder, salt, packing powder and baking soda and mix just until combined.
Stir in potato chips and mix until chocolate dough is well studded. (I take a few extra potato chips and stud the outside dough with them, because, well, more = more.)
Scoop ¼ cup mounds of dough onto the greased baking sheets 2-inches apart.
Bake at 350F for 9 minutes (remember to set that timer) until they puff, spread and make your kitchen smell like a chocolatey paradise.
