Bake Club Coconut & Granola TreeHuggers

Makes 12-18 cookies
1 cup (2 sticks) butter
¾ cup light brown sugar
⅔ cup sugar
2 eggs
2 teaspoons vanilla extract
1 ⅔ cups flour
1 ¼ teaspoons cinnamon
1 ¼ teaspoons salt
1 teaspoon baking soda
2 ¼ cups granola (store bought or Bake Club rerun) (link to bake club past recipe)
½ cup sweetened shredded coconut
1 cup powdered sugar
Heat oven to 350F and line 2 baking sheets.
Mix together butter and sugars until smooth. Mix in eggs and vanilla and mix until smooth.
Mix in flour, cinnamon, salt, and baking soda and mix until shaggy.
Mix in granola and coconut just until evenly dispersed.
Scoop dough into 2 tablespoon sized balls and roll in a bowl of powdered sugar to coat. Transfer to the baking sheets, placing each 2 inches apart from one another and bake at 350F for 10-12 minutes until golden brown.
