Popcorn Cupcakes

Ingredients:

1 bag plain popped microwave popcorn OR store bought popcorn (3.3 oz)
6 Tablespoons butter, melted
1 cup sugar
2 eggs
1/3 cup oil
1/2 cup milk
1 teaspoon vinegar
3/4 cup flour
1 1/4 teaspoon baking powder
1 teaspoon salt

Instructions:

Ready to make your movie night popcorn cupcakes? Start with heating your oven to 350F. Line cupcake tins.
 
Grind popcorn down in a blender until pulverized. I’m talking flour like state. Popcorn “flour”. Measure 2 1/2 cups. Set aside.
 
Whisk butter and sugar. Add eggs and whisk to combine. Add oil and whisk to combine. Add milk and vinegar and whisk to combine. Add the dry ingredients2 1/2 cups popcorn “flour”, flour, baking powder and salt. Whisk to combine.
 
Divide batter evenly across 12 cupcake liners and bake 25-30 minutes until they rise and puff and bounce back to the touch. Cool completely before frosting!

 

Strawberry Frosting
Ingredients:
¾ cup (1 ½ sticks) unsalted butter, softened
1 ½ cups powdered sugar
¾ cup fresh strawberries, 5 to 6 berries depending on size
¼ teaspoon salt
 
Dark Chocolate Frosting
Ingredients:
¾ cup (1 ½ sticks) unsalted butter, softened
2 ¼ cups powdered sugar
⅓ cup cocoa powder
3 tablespoons milk
¾ teaspoon vanilla extract
¼ teaspoon salt

STRAWBERRY FROSTING
Instructions:

Prep!
Cut off the tops of the strawberries with a butter knife, and then slice them up.
 
Mix!
Starting on a low speed use a hand mixer or a stand mixer with a paddle attachment to beat the butter and powdered sugar for 1 minute. Increase to a medium speed and whip until super smooth, about 3 minutes. Use your spatula to scrape the sides of your large mixing bowl well and add the frosting to your cooled cupcakes.
 
Add and fluff!
Add strawberries and salt. Mix until combined and fluffy, about 1 minute.
 
 
CHOCOLATE FROSTING
Instructions:

Mix!
Starting on a low speed use a hand mixer or a stand mixer with a paddle attachment to combine your butter, powdered sugar, and cocoa powder, 1 minute. Increase to a medium speed and whip until super smooth, about 3 minutes. Use your spatula to scrape the sides of your large mixing bowl well.
 
Add and fluff!
Add milk, vanilla and salt. Mix until combined and fluffy, about 1 minute.
