Bake Club Lumberjack Muffins

Makes 6 muffins

 

1 egg

⅓ cup sugar

¼ cup light brown sugar

¼ cup milk

¾  teaspoon vanilla extract

¾ teaspoon vinegar

 

½ cup vegetable oil

¼ cup maple syrup

 

1 cup flour

1 teaspoon baking powder

¼ teaspoon baking soda

¼ teaspoon kosher salt

 

½ cup old-fashioned rolled oats

½ cup chopped pecans

¼ cup chocolate chips

 

Heat the oven to 375°F and line muffin pans with paper cups.

In a large bowl, whisk together egg, sugars, milk, vinegar and vanilla until even and smooth. Whisk in the oil and maple syrup until even and glossy.

Add the flour, baking powder, baking soda, and salt and mix just until the batter comes together. Stir in the oats, pecans, and chocolate chips.

Divide the batter evenly across muffin pans (about ⅓ cup per). Bake the muffins at 375°F for 18 to 20 minutes, until the muffin tops brown slightly and a toothpick comes out clean when poked into the center. Cool slightly or completely before eating, your call. These babes make an epic breakfast or afternoon snack and make you feel powerful like you and your blue ox just handled business.
