Bake Club Ted Lasso Biscuits

This Ted Lasso Biscuit Recipe makes 12 Lasso size pieces


2 sticks unsalted butter, softened

1 ⅓ cup confectioner’s sugar

3 tablespoons light brown sugar


3 ea egg yolks (make some bake club nougat with those whites!)


1 ¾ cup ap flour

scant ½ teaspoon kosher salt


Heat the oven to 325F and pan spray a 8x8” baking dish.

In a medium bowl, mix the butter, powdered sugar, and brown sugar together vigorously until smooth.

Stir the egg yolks into the shortbread mixture.

Add the flour and salt, mix just until the dough comes together. The less you mix the dough, the more posi vibes your Ted Lasso biscuits will have.

Press dough into an even layer in a prepared pan (or a parchment paper lined pan) and bake at 325F for 45 minutes until a thin, golden brown layer forms on top.
