Bake Club Granola Bars

 
(Psst- she’s gluten free AND vegan!)
Makes 9 squares
 
½ cup maple syrup
¼ cup + 1 tablespoon olive oil
3 tablespoons nut butter (almond, cashew, pb, etc)
1 tablespoon vanilla extract
 
1 cup rolled oats
½ cup almond flour or gf flour (including oats you grind down into a flour-like state
1 tablespoon cornstarch
1 ¼ teaspoons kosher salt
½ cup pecans, chopped and toasted
⅓ cup chocolate chips (vegan if that’s your thing!)
 
Heat the oven to 325°F. Pan spray a 8x8” square baking dish.
 
In a large bowl mix together maple, olive oil, nut butter and vanilla with a whisk until well combined. Add in oats, almond flour, cornstarch and salt and mix to combine with a spatula. Stir in pecans and chocolate chips. Transfer the mixture into the greased baking dish.
 
Bake at 325°F for 45 minutes until the bars are a deep, gooey golden brown all around. Remove from the oven and cool completely at room temperature.
